Skinny gluten free Banana muffins
I don’t consider myself a huge baker, but I love making these when I have ripe bananas laying around. They are low calorie, gluten free, and a delicious snack for when your’e on the go or as a “healthier” dessert.
If you want to keep it dairy free you can sub the greek yogurt for cashew milk yogurt. I love using Collagen when baking because it has many benefits for improving skin, hair, nails, and joint pain, but you can always skip this step. Hope you Enjoy!

Ingredients:
1 tbsp almond milk
1 tbsp coconut oil
1 tsp baking soda
1/2 cup of greek yogurt
1/4 cup honey
1 egg
1 1/4 cups of red mill gluten free flour
1/4 cup oats
1 tbsp organic vanilla extract
1 tbs ground cinnamon
2 scoops skinny fit collagen, unflavored
3 ripe bananas
1/2 cup semi sweet chocolate chips
1/4 cup chopped walnuts
Directions:
Preheat oven to 350 degrees. Spray 12 cup muffin tin with olive oil/ any non stick cooking oil.
In a medium bowl mix today flour, baking soda, oats, collagen and cinnamon.
Add banana, greek yogurt, vanilla, oil, egg, milk and honey to a blender or kitchen aid, mix on high until smooth.
Add in the dry ingredients and mix until well combined. Gently fold in the walnuts and half of the chocolate chips.
Add batter into muffin tin, leaving a little space at the top for muffins to rise, then sprinkle with remaining chocolate chips.
Bake for 20-25 minutes until toothpick comes out clean then let sit for 5 minutes.
